We're commonly approached to resolve one problem "we need a new website", but frequently find the underlying business requirement is more complex than that. Surveys, card sorting and user personas are all helpful in defining the needs of your target audience, along with analysis of existing customer trends and behaviours (analytics). Understanding your audience at an early stage of a project saves unnecessary functionality and design changes at a later date, and delivers better converting sales.
